This was a standout one for us: a charismatic strong ale brewed with locally grown herbs and spices from The Gardens on Spring Creek. Trellis employs a potent pale ale background and showcases its special additions: cilantro and coriander—along with lavender, rose petals, and pineapple mint. Along with being an expressive (and wholly unique) offering, every bottle of Trellis Garden Ale sold results in one dollar going to support The Gardens on Spring Creek.

This is an impressive one, and we were particularly struck by how well the alcohol’s hidden, as well as how the spice and herb additions remain perfectly on point throughout. At 8.7%, this stays crisp and hugely drinkable, refreshing with a nice peppery jolt of carbonation at the front of the impact. And despite the coriander-to-lavender adds, this comes across as just a deftly hopped, massively grassy and herbaceous pale ale, if a bit large in body. This is to say that the fresh garden contributions work perfect here: seamless, refreshing, still surprising.

Trellis, to return to the core of things, does exactly what any concept beer of this sort should hope to do: execute without fully showing its cards, and pull off awesome depth without any edges coming through. If one thinks about them, the special ingredients become obvious, or at least rise to the surface: that refreshing tropical snap from the pineapple mint, the mellow warmth of coriander, and the floral/herbaceous crossover of lavender… We thought of gin and tonics, light absinthe cocktails—all while adhering to the bright, bitter profile of an IPA.

That gin-and-tonic analogue was one we kept going back to, though with a gin that falls very heavy on the botanical side of things; this has way more layers to it than any G&T that we've had. Spritzy from the outset, well carbonated from the bottle conditioning, and (while not to the edge of double-IPA territory) certainly charged with herbal hop bitterness that serves to guide things along. There's so much to dig into with this beer as it warms up: minty bitters, floral notes for miles, and a long finish of bitterness that never veers into astringency. Just a brilliant beer—one that left an impression. Enjoy bottles fresh to optimize the spice aspects.
