Saisons in particular tend to be a very broad, fraught framework of beers to dive into, and I\u2019ll frequently head to the chapter in Phil Markowski\u2019s Farmhouse Ales<\/em> titled \u201cA History of Saison,\u201d which was contributed by Brasserie de la Senne\u2019s co-founder Yvan De Baets\u2014both a great brewer and a well-regarded historian.<\/p>\n

In the context of this month\u2019s featured 100%-Brett<\/em> beer via De La Senne, this chapter notes how crucial the impact of Brettanomyces <\/em>yeast was to old-school saisons (before things shifted away from frequent sourness, in favor of the more bitter-forward interpretations of saison). De Baets, in compiling a profile of these older saisons, writes, \u201cAn important characteristic was their wine-like character, a sign of aged beers that were properly made. This vinous and sour side [corresponded] to the \u2018taste of the North\u2019 (Belgium and Northern France), and was the \u2018must have\u2019 of the era. The nose of old saisons <\/em>was clearly marked by Brettanomyces<\/em>.\u201d<\/p>\n

In concluding his historical deep dive into classic saisons, the De La Senne brewer added, \u201cAn authentic saison has a small \u2018wild\u2019 side, rustic, indefinable, far from the clean aspect of certain engineered beers of today.
