Blackberry Kölsch builds upon the clean, delicate framework of a traditional German-style Kölsch, adding a bright infusion of ripe blackberry character. Pouring pale straw-gold with excellent clarity and a soft white head, this beer opens with fresh berry aromatics layered over subtle grainy malt and faint floral hop notes. On the palate, it is light-bodied and crisp, with restrained bitterness allowing the fruit to shine. The blackberry presents naturally — slightly tart, gently sweet, and refreshing rather than sugary — complementing the beer’s clean fermentation profile and smooth finish. Founded in 1995 in the ski destination town of Ellicottville, New York, Ellicottville Brewing Company (EBC) opened at a time when craft brewing was still gaining traction across the Northeast. Established as a brewpub serving both locals and visitors to Holiday Valley and HoliMont ski resorts, EBC quickly became a cornerstone of the village’s hospitality scene.
