Healdsburg Brewing Company
It’s been nearly a year since we’ve featured one brewery exclusively and brought you their entire product line. And as selective as our panel is when rating potential featured selections, we consider it truly an honor to be chosen for this type of format. The Healdsburg Brewing Company will not let you down. They currently brew four exceptional beers and you’re going to try them all.
The brewery, founded by homebrewers Bob Tingey and Ed Bischofberger, is a family run venture located on an 11-acre parcel in Healdsburg, California. At just under two years old, the brewery is somewhat of oddity in this region as it is surrounded primarily by vineyards and wineries. The beers are primarily distributed on draft at this point in time as the brewery only recently began bottling in the 22-oz. bombers we’ve sent you. The breweries brand name, Wild Horse, is meant to be representative of their product line being one that sets its own course, ventures into new territories and is generally bold and exciting. We think they’re living up to the name thus far and hope you’ll agree.

Brewed with a combination of no less than seven grains including: Two Row Pale, Crystal, Chocolate, Special B malts, Roasted Barley, Malted Wheat and Flaked Oats, Healdsburg’s Oatmeal stout is a real treat to be savored. The brewery hops their Oatmeal Stout with a variety of four types of hops making it an unusually complex beer. Cascade, Willamette, Tettnanger, and Galena hops are all used during the 90-min. boil. A proprietary in house ale yeast strain is used.
Notes From the Panel:
Immediately note a big roasted barley nose with a fair amount of floral hop characteristics also evident. Look for good head retention in this nearly opaque, non-filtered, full-bodied stout. This Oatmeal Stout has a very well balanced, exceptionally smooth, complex body offering an elaborate blend of maltiness and roasted characteristics with an equally unique hop profile. It starts sweet and ends with a very dry roastedness. The oatmeal texture is definitely there. Overall, a great interpretation of the style, very smooth and very drinkable.

Wild Horse India Pale Ale is brewed with a combination of Two-Row Pale, Crystal, Munich and Wheat malts. As appropriate, the beer is hopped several times during the boil and then dry-hopped as well, all with Columbus hops and in healthy doses. Hopheads prepare for an enjoyable brew!
Notes From the Panel:
Healdsburg’s IPA starts with an extremely hop-citrusy nose with some floral hop traces evident in the background. Look for excellent head retention in this pale, filtered, medium-bodied ale. The flavor profile begins with a pleasant maltiness and moves quickly into an aggressive, bitter hoppiness. This is definitely an IPA! Overall, very much true to style and a big, bold flavor. We liked it!

Wild Horse Pale Ale is a rather complex California Pale Ale brewed with a combination of Two Row Pale, Munich, Caravienne and Wheat malts. Northern Brewer and Centennial hops are used up front for their bittering characteristics while a serious dose of Cascade hops are added towards the end of the boil primarily for their aromatic contributions. The use of costly Bavarian Caravienne malts differentiates this Pale Ale from other domestic beers in the same category.
Notes From the Panel:
Immediately look for an intense and very pleasant floral and fruity hop nose up front. Note nice head retention in this filtered, copper, medium-bodied beer. Healdsburg’s Pale Ale starts with a rich caramel flavor, moves into a well-balanced floral hop character towards the middle and finishes on a dry medium-bitter note. Overall, a big and flavorful interpretation of an American Pale Ale.

Wild Horse Wheat is one of the more flavorful, fuller-bodied American Wheats we’ve had the pleasure to feature. It is brewed with a combination of Two-Row Pale, Munich and Wheat malts. Healdsburg hops this one with both Centennial and Cascade hops. It’s meant to be a summer seasonal beer, offering both thirst quenching and refreshing qualities.
Notes From the Panel:
Still yet another great beer from a solid brewery. This American Wheat starts with a fruity and slightly citrusy nose. Look for good head retention in this unfiltered, golden-pale, medium-bodied beer. Its body begins sweet and fruity with a definite wheat character evident. It seems that the brewery has used an unusually high percentage of wheat in the total grain composition of this beer. A dry, tangy finish balances this beer wonderfully. Overall, one of the more flavorful American Wheats being brewed in the U.S. today. You’ll like it.

May I speak frankly here, my dear? Lose the buttnut. What is this guy some kinda materialistic, shallow Richard Simmons Nazi-boy. Can’t appreciate the weight? ‘Fraid you gonna kick his shinny butt around the boudoir? Personally, I like a fifi with a little meat on her milk-bones and I’m a picky pooch. All right, I’m not that picky. A pulse and a flea dip and I’m in. But hey, I’m a dog and you’re man is missin’ the point here. Sorry, on a rant here. Gotta remember I’m not Dear Abbey – not that she’s any more qualified – Back to your question. Beer is only gonna add to your womanly figure if you drink too much of it! But hell, you eat too many alfalfa spouts and pita bread and you’ll gain weight too. My point is that although the alcohol and sugars in beer add up to a fair number of calories per frosted mug, it's literally fat-free. And relative to some of the other substances we pump into our personal food processors, it’s looking damn healthy. Your basic standard 12-ounce bottle of lager beer or pale ale of normal strength weighs in at about 150 calories – none of which are derived from fat. Beers of other styles vary somewhat with alcohol and malt content, of course, up to 200 calories or more for 12 ounces of a strong beer like a Bock or a sweet beer like a Porter. "Lite" beers, conversely, range from about 95 to 110 calories, depending on brand. As a side bar, I want you to realize that the difference in caloric content between a regular and a lite beer is the equivalent of one stalk of raw celery. Think about it before you go there next time. Eight ounces of Fruit yogurt has 230 calories and 3 grams fat and one serving of Fettuccine Alfredo, one of my favorite dishes, comes in at 1,498 calories and 62 grams fat! Damn. Anyway, if you must cut back, do it elsewhere and don’t deprive yourself of your brew, girl! Hope that helps build your case, counselor.

Food For Thought...
Wild Horse Ice Cream
Don’t discount these delectable goodies until you’ve tried them! The well-roasted malt barley used to make stout beers imparts a rich flavor that is a perfect marriage with many desserts. In addition to ice cream, stout beers have traditionally been used to accentuate spice cakes, honey breads, and it was born to complement chocolate mousse!
- 8 eggs, separated
- 1 cup superfine sugar
- 1 cup Oatmeal Stout
- 1 ½ cups light cream whipped w/ 1 ½ cups heavy cream
Whisk yolks, sugar and beer together until thick and mixture forms ribbons when whisk is lifted. Fold in whipped creams. Whisk egg whites until stiff and carefully fold into mixture. Pour into container and freeze, or use ice-cream maker. Serves 8 normal people, 3 with a sweet tooth and little control, or Ben or Jerry.
Wild Horse Chocolate Mousse
- 1 lb. Chocolate chips, or other bitter chocolate
- ¾ cup Oatmeal Stout, room temperature
- 3 tbsp. Coffee liqueur
- 8 large eggs, room temperature, separated
- ½ tsp. Cream of tarter
- 1 ¼ cups heavy whipping cream, chilled
- ½ cup sugar
- 1 tsp. Vanilla extract
Melt chocolate chips slowly in double boiler. Remove from heat. Stir in stout and coffee liqueur, blending until smooth. Add egg yolks to mixture two at a time, blending thoroughly after each addition. In a separate bowl, whip heavy cream, vanilla and sugar until stiff peaks. Chill cream mixture. In another bowl, whip egg whites with cream of tartar until stiff, and gently fold egg whites and whipped cream together. Very slowly fold ¼ of this mixture into the melted chocolate until smooth, then fold in remainder of cream mixture until no white is showing. Spoon into 10 serving goblets (unless one of your guests is Rush Limbaugh in which case one big troth and a sheet of plastic on the floor will do) and chill. Some serve with a raspberry sauce, but you may not want to compromise the wonderful malty, chocolate flavor.

Q: What can I do if I'm having difficulty receiving my shipment
at home?
A: You should consider having our discrete box delivered to
your work location or to a neighbor 21 yrs. of age that can receive
it for you. As your shipment requires and adult signature to receive,
it's always best to ship it to a location where someone will be there
to receive it for you. The box is brown corrugated cardboard and doesn't
say "Beer" on it anywhere.
Q: What should I do if I'm moving or want to extend my membership?
A: Please call us prior to the 5th of the month to make all
account related information changes such as address changes, membership
extensions & terminations, or gift accounts desiring to continue
their memberships. Address changes made after that time may require
a repackaging and re-shipping charge of $12.00. Additionally, if your
box is re-routed by UPS from an address different than what was originally
specified, you may incur a $5.00 re-routing charge.
Q: What happens if my shipment is damaged?
A: If your shipment arrives damaged, please call us immediately
toll free at 1-800-625-8238 and report the incident for a prompt resolution.
Q: What happens if my credit card is declined?
A: We will send you a courtesy notice asking you for an alternative
payment method and your order will be temporarily suspended until
we hear from you.
Q: What happens if I join under a special incentive program

A: Not a problem. Although we want to do everything we can
