Goliath pours a striking deep copper to ruby red, crowned with a dense, creamy off-white head that lingers and leaves fine lacing along the glass. The aroma is layered and assertive, opening with caramelized malt, toasted bread crust, and hints of dark toffee. Beneath the malt richness lies a pronounced hop presence—resinous and citrus-driven—adding lift and aromatic contrast.

On the palate, Goliath immediately showcases its imperial stature. Waves of caramel, light molasses, and biscuit-like malt sweetness build a robust foundation, while firm hop bitterness rises to balance the sweetness. Notes of orange peel, pine resin, and subtle herbal spice interweave with deeper impressions of dried cherry and faint cocoa. Despite its 9.2% ABV, the alcohol is well-integrated, providing warmth and structure without sharpness.

As the beer opens, its complexity deepens. The malt character grows rounder and more layered, revealing nuances of toasted pecan and light brown sugar. The hop bitterness remains steady, carrying through to a long, structured finish that is both warming and clean. Full-bodied yet controlled, Goliath demonstrates how power and balance can coexist within a single, carefully composed imperial red ale.

Goliath drinks beautifully fresh, when hop character and malt sweetness are in vibrant tension. With short-term cellaring of 1–2 years, hop intensity will soften slightly, allowing deeper caramel, dried fruit, and subtle oxidative sherry-like tones to emerge. The beer’s high ABV and firm structure support graceful aging without loss of integrity.

For food pairings, look to dishes with bold flavor and caramelized depth. Grilled ribeye, smoked brisket, and barbecue ribs align naturally with its malt richness and warming finish. Aged cheddar, smoked gouda, and blue cheeses provide a savory counterpoint to its sweetness and bitterness. Spicy sausage flatbreads, roasted pork loin, and mushroom-based dishes also complement its complexity. For dessert, consider dark chocolate torte or pecan pie, where the beer’s caramel and toasted notes echo the sweetness while its bitterness prevents cloying excess.

BJ’s Restaurants & Brewery traces its roots to 1978, when it began as a small pizza shop in Santa Ana, California. As the brand grew throughout the 1980s and early 1990s, leadership recognized that a proprietary brewing program could elevate the guest experience and differentiate BJ’s within the competitive casual dining space. In 1996, BJ’s officially launched its craft brewing operations, positioning itself among the early large-scale brewpub pioneers in the United States.

Unlike many independent microbreweries that began with distribution as their primary focus, BJ’s developed its beer program within a restaurant-driven model. This structure required not only creativity but consistency across a broad geographic footprint. To support growth, BJ’s established regional brewing facilities capable of producing fresh beer for restaurants nationwide, maintaining quality control while scaling operations.

Over the decades, BJ’s brewing team has cultivated a portfolio spanning approachable lagers, hop-forward IPAs, rich stouts, Belgian-inspired specialties, and barrel-aged releases. The brewery’s philosophy emphasizes balance and drinkability—even in higher-alcohol styles—ensuring that strength supports flavor rather than overwhelming it. Goliath stands as a testament to this approach: bold, structured, and confidently executed, yet remarkably composed for its scale.
